Old Fashioned Rice Pudding
(from The American Gourmet Collection Cookbook)
4 cups Milk, divided
1/2 cup Long Grain Rice
1/2 cup Raisins
1/4 cup Unsalted Butter
3 beaten Eggs
1/2 cup Sugar
1 teaspoon Vanilla
1/2 teaspoon Salt
Ground Cinnamon
1. In a heavy 2-quart saucepan, bring 2 cups milk, rice, and raisins to boiling. Reduce heat.
2. Cover and cook over very low heat about 15 minutes or until rice is tender. Remove from heat and stir in butter until melted.
3. Preheat oven to 325 degrees.
4. In a large mixing bowl, combine 2 cups milk, eggs, sugar, vanilla, and salt. Gradually stir rice mixture into egg mixture.
5. Pour into a 10 x 6 x 2 baking dish and bake at 325 degrees for 30 minutes. Remove from oven, stir well, and sprinkle with cinnamon.
6. Return to oven for 15-20 minutes more, until a knife inserted near the center comes out clean. Serves 6.
